Overview
A hotel/wine estate in Cape Town is seeking a highly skilled and experienced Food & Beverage Operations Manager to oversee and manage all F&B and Meetings & Events (M&E) operations within the establishment. Candidates must have a minimum of 5 years experience in a similar role within a 4/5* hotel or estate. n
Key Responsibilities:
- Oversee day-to-day F&B and Meetings & Events (M&E) operations, including restaurants, bars, and catering services for M&E
- Ensure compliance with health, safety, and sanitation regulations.
- Implement and enforce operational procedures and standards to enhance efficiency and service quality.
- Recruit, train, and manage food and beverage staff, including servers, chefs, and bartenders.
- Conduct performance evaluations and provide coaching and feedback.
- Foster a positive and collaborative work environment to ensure high staff morale and retention.
- Develop and manage the food and beverage budget, including forecasting, cost control, and financial reporting.
- Monitor inventory levels and order supplies to maintain optimal stock while minimizing waste.
- Analyze financial performance and implement strategies to achieve revenue and profitability targets.
- Ensure exceptional guest service by addressing and resolving customer concerns and complaints.
- Monitor guest feedback and implement improvements based on reviews and suggestions.
- Develop and implement promotional strategies to attract and retain guests.
- Collaborate with chefs and bartenders to develop and update menus and beverage offerings.
- Ensure menu items meet quality standards and are consistently prepared and presented.
- Stay informed about industry trends and incorporate new ideas to enhance the dining experience.
- Ensure all food and beverage operations adhere to local, state, and federal regulations.
- Implement and enforce safety protocols to prevent accidents and ensure a safe working environment.
- Conduct regular inspections and audits to maintain high standards of cleanliness and safety.
- Strong negotiating and closing skills are required, along with a demonstrated ability to develop negotiation strategies for complex activities. Ability to evaluate legal and business risks and ramifications of proposed contractual terms.

Requirements:
- Postgraduate / Degree or three years Diploma in Hotel Management or equivalent is preferred.
- Previous 5* experience either as a Senior Assistant F&B / F&B Manager is required.
- Must have own car and a valid driver’s license.
- Candidates must be available for face-to-face interviews in Cape Town and should reside in the Stellenbosch, Paarl, Franschhoek, or Somerset West region.
