A hotel/wine estate in Cape Town is seeking a highly skilled and experienced Food & Beverage Operations Manager to oversee and manage all F&B and Meetings & Events (M&E) operations within the establishment. Candidates must have a minimum of 5 years experience in a similar role within a 4/5* hotel or estate. n

Key Responsibilities:

  • Oversee day-to-day F&B and Meetings & Events (M&E) operations, including restaurants, bars, and catering services for M&E
  • Ensure compliance with health, safety, and sanitation regulations.
  • Implement and enforce operational procedures and standards to enhance efficiency and service quality.
  • Recruit, train, and manage food and beverage staff, including servers, chefs, and bartenders.
  • Conduct performance evaluations and provide coaching and feedback.
  • Foster a positive and collaborative work environment to ensure high staff morale and retention.
  • Develop and manage the food and beverage budget, including forecasting, cost control, and financial reporting.
  • Monitor inventory levels and order supplies to maintain optimal stock while minimizing waste.
  • Analyze financial performance and implement strategies to achieve revenue and profitability targets.
  • Ensure exceptional guest service by addressing and resolving customer concerns and complaints.
  • Monitor guest feedback and implement improvements based on reviews and suggestions.
  • Develop and implement promotional strategies to attract and retain guests.
  • Collaborate with chefs and bartenders to develop and update menus and beverage offerings.
  • Ensure menu items meet quality standards and are consistently prepared and presented.
  • Stay informed about industry trends and incorporate new ideas to enhance the dining experience.
  • Ensure all food and beverage operations adhere to local, state, and federal regulations.
  • Implement and enforce safety protocols to prevent accidents and ensure a safe working environment.
  • Conduct regular inspections and audits to maintain high standards of cleanliness and safety.
  • Strong negotiating and closing skills are required, along with a demonstrated ability to develop negotiation strategies for complex activities. Ability to evaluate legal and business risks and ramifications of proposed contractual terms.

Requirements:

  • Postgraduate / Degree or three years Diploma in Hotel Management or equivalent is preferred.
  • Previous 5* experience either as a Senior Assistant F&B / F&B Manager is required.
  • Must have own car and a valid driver’s license.
  • Candidates must be available for face-to-face interviews in Cape Town and should reside in the Stellenbosch, Paarl, Franschhoek, or Somerset West region.
